Pimpinella anisum
The hydrosol of this very aromatic little seed is recognized as antiputrid, antispasmodic and digestive.
It also has aphrodisiac, tonic and also repellent properties against certain parasites.
Can be used in Indian cuisine but also in pastries.
Green anise essential oil is also used in the composition of the famous Greek Ouzo and Mediterranean Pastis.
Properties
Anise is sweet, very aromatic and is distinguished by its characteristic flavor.
Native to the eastern basin of the Mediterranean, it was first cultivated in Egypt and the Middle East for 4000 years before being brought to Europe for its medicinal properties.
According to Pliny the Elder, anise was used as a remedy for insomnia and chewed with a little honey in the morning to freshen breath. In 19th century medicine, anise was prepared as aqua-anisi (“Water of Anise”) in doses of an ounce or more.
The hydrosol can be used in cooking, in mocktails or cocktails and added to products when you want to find a sweet and subtle flavor of liquorice.
